Pumpkin Oatmeal Cranberry Date Muffins
PUMPKIN MUFFINS W/ Cranberries, raisins, & dates
In blender mix together until dates are blended in well.
1 1/2 c canned pumpkin (1 15 oz can)
1/2 c. applesauce
8 dates, pitted
1/4 real maple syrup
3 eggs (add after the above is well blended)
Mix dry ingredients:
3/4 c. old fashioned rolled oats
1 TBSP. baking powder
1 1/2 tsp. pumpkin pie spice
2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 tsp. pink Himalayan salt, sea salt, or Utah "Real Salt"
In a mixer, combine the dry ingredients with the wet.
Then add: these are optional and can be switched out with whatever
1 c. fresh cranberries
1 c. chopped or shredded apple
1/2 c. raisins that have been soaked in hot water
Pour batter into muffin tins sprayed with cooking spray. Spray over the dishwasher door to minimize clean up and mess. Bake at 375 F for 18-20 minutes. This recipe created at 4800 ft. elevation.
The muffins were very moist the next day and super delicious!
